Nespresso machine for Coffee and Walnut Cake

We bought a Nespresso machine, an offer which really was too good to miss and now we have two coffee machines that sit on opposite sides of the kitchen.

The Dolce Gusto machine makes great coffee, it also makes lots of other great drinks which my kids enjoy, particularly the iced Cappuccino and iced tea, drinks which if we were going to Starbucks would cost a small fortune.


The Nespresso machine however, makes coffee an experience and I wish we had gotten around to getting earlier. If you are thinking about getting one of these machines, this month there is an offer too good to be missed. Not only is the machine on offer but the Aerochino machine is free. Yes that’s right free as long as you purchase their coffee pods from the website.

We’ve been in coffee heaven, and what better way to enjoy a cup of rich intense coffee, but with Coffee and Walnut cake.

This is a simple recipe – just use the Muffin mixture from this recipe and use just walnuts instead of the blueberries and cinnamon, add an espresso shot of coffee to the mix and bake.

That’s it. I used these cute cardboard mini loaf cases which I spotted in M&S, which were a perfect size for individual portions to serve for a tea time treat.

What to do with a ripe juicy Pomegranate

Pomegranates are one of the fruits that I think of as very versatile. It wasn’t always so. I never really knew what to do with it other than throw it into a fruit salad. But of course you can add it as a lovely topping on Roast Lamb, or sprinkle some into a plain yoghurt with breakfast cereal. l like to sprinkle them over chocolate ice cream.

A few years ago, a friend invited me to an impromptu lunch at her house. We’d been to a meeting together and on our way home, she collected a few groceries and invited me to lunch. As she started to make the colourful salad, she took out the reddest pomegranate I’d ever seen, cut it open and tapped some of the seeds out over the bowl of salad. A drizzle of Olive oil and orange juice dressed the salad. It was delicious.

So when I saw these huge Pomegranates in the green grocers, ripe and gorgeous I bought one along with some large oranges.

If you are looking for something easy to make, this lovely refreshing orange and Pomegrante fruit juice takes just a few minutes to make.

Squeeze some fresh Oranges into a jug. I stuck a sieve over the top of the jug to keep the pips and pith from falling in. Two Oranges, some mango juice I had in the fridge made it into this drink. I added some fizzy mineral water and then swirled in about two tablespoons of Pomegrante seeds into the sparkling juice. It frothed to the top of the jug just in time to serve with some ice. Enjoy!

Rose Pouchong Tea and Conconut body scrub

This aromatic Rose Scented tea, made its way into a body scrub, simply because I could not get enough of the delicate scent of rose scented tea.

Since tea is well-known for its antioxidant properties, the act of steeping the tea leaves in hot water and drinking it will activate its health giving properties. I thought it would also make for a wonderfully fragrant body scrub, which would not only delicately scent    my skin, but would leave it wonderfully soft and pampered this weekend.

Making this could not be easier. Simply take a cupful of coarse sea salt. In my case I’m using the Dead Sea bath salts that I purchased a while back and am working my way through.

Add a spoonful of Rose Pouching loose leaf tea and mix into the salt granules.

Add a spoonful of Coconut oil and mix until the consistency is soft, slightly damp and granular. If you want to boost the moisture content, you can add a splash of Rosewater, and mix in until you get the consistency you’d like for the scrub. Just enough moisture in my case to make the salt form a clump in my hands.

You can add Rose essential oil to this to further enhance the delicate scent of Rose. The scent of the coconut oil compliments the sweet floral scent of the Rose tea and will moisturise the skin, leaving a silky softness.

Apply to damp skin, by gently rubbing the mixture in a circular motion on your skin. Don’t overdo it, the aim is to rub until your skin feels as if it has had a workout and has a soft glow.

You can either use thus scrub in the shower and rinse away the tea leaves as you go, or as I did, in a bath so that all the gorgeous scent, little blobs of Rose petals and tea leaves unfurl and surround you in the delicate scent of Rose Pouchong tea. The antioxidants in the tea will aid aching limbs and muscles. I like the idea of bathing in tea, it’s qualities being good on the outside as well as on the inside.

The origins of the tea come from China, later imported to Taiwan, where it has become a specialty. This tea in the pretty caddy was a treat from Fortnum and Masons, you can of course get this tea fairly easily in a supermarket or find it in specialty tea websites.

The leaves from the tea plant are harvested and wrapped in paper, layered and left to dry, with dried Rose buds added to delicately scent the tea, once dried, the loose tea leaves look like little tiny lengths of rope.

It is a lovely tea, refreshing, with just the right rich depth of flavour. It’s strange because if you inhale the scent of this tea, its wonderful scent will transport you to a scene out of The Arabian nights filled with the sweet scent of Turkish delight. It does not have a dark smoky taste like Chinese Oolong or light and refreshing sparkle of green tea, but somewhere in between. Sweet and fragrant.

I love to drink this tea at the end of the day, a full pot with a biscotti, which I like to dunk in the tea or a coconut flavoured biscuit. Hmmm off to brew a cuppa!

I think it’s the little things, small pleasures that keep you going.

Since we received a Dolce Gusto coffee machine, I have come to appreciate a small hit of caffeine to kick start my day.

We’ve been trying out all sorts from the Dolce Gusto range, both from the online shop as well as the ones you can find in the supermarket.

As I’m not keen on lattes, being a little too milky, I much prefer strong black coffee. The one that I like most is the limited edition Yunnan espresso. This little capsule is only available from  the online shop.

I had never heard or read about coffee grown in China. Like most people I associate tea with China, so it was so lovely to discover a coffee grown in a climate and location of dramatic mountain ranges. Imagine these as the scene to wake up to, where rice is grown on man made terraces on mountains. It must be such an experience. It’s going on my bucket list now as a place to visit.

The coffee itself is distinctive due to its light fruitiness. Even though it’s an intense Esspresso, I think it smells light and refreshing. The texture of the coffee is delicate yet rich and powerful, a combination which reminds me of the Yin and Yang symbol, a balance of light and dark.

In a few days it will be time to celebrate Chinese New Year. I can’t wait… We’ve always celebrated. The last two years, venturing into China Town to see the dragon dancing in the streets in London and eating in one of the nearby restaurants. It’s become a bit of a tradition for our family.

I came down with a cold not long after returning from our holiday. I have a feeling that it was probably caught whilst on holiday, but the symptoms only started to show once we got home.

By last Monday, my head felt as if it was caught in a vice and a sore throat was making me feel as if it was on fire.

My first thoughts was to turn to the usual remedy in our medicine cupboard, which is a hot mug of Lemsip. After two days however, I didn’t feel much better, in fact I was counting down the hours to my next fix of Lemsip.

It was at this point that I decided to stop using Lemsip and try something more natural as my stomach wasn’t feeling too great with all the chemicals and my head was feeling fuzzy as if it was wrapped in cotton wool.

Lemon and Honey as a hot drink was easy to make and since when you look at the ingredients on a pack of Lemsip, it contains for the most part lemon and paracetamol, plus a decongestants.

I decided that all natural ingredients would be better and hopefully it would also act as a detox and help cleanse my digestive system.

For blocked nose, instead of the chemical decongestants in the Lemsip, I have been inhaling steam from boiling hot water and adding a few drops of Olbas Oil (If you don’t have this, eucalyptus or any type of oil that has menthol/mint essential will have a similar effect) in a large bowl with a towel over my head.

Adding a few drops of lemon essential oil to the water as well, means that the steam is also acting as a facial, opening pores and giving my skin a deep clean.

As a parent, I’ve never been keen on using over the counter medicines on my kids. In fact my youngest doesn’t like Calpol (a liquid suspension of paracetamol in syrup) that I used to give them when they were very young. She too prefers the hot drink of Lemon and Honey when ever she feels a sore throat beginning to take hold.

For coughs, on my last visit to the GP with my daughter when she had a bad cough, he advised that a simple linctus of honey and lemon or glycerine would be just as effective as an over the counter medicine to help soothe a cough.

In fact in the UK, the National Health Service has information about simple treatments for colds and coughs, which advises against over the counter medicines for coughs as there isn’t enough evidence that they are effective.

St Clements is the quintessential  English drink for the summer, made with equal parts of oranges and lemons.

I love squeezing the fresh oranges into a jug with a wooden Citrus Reamer.* There is something therapeutic about using this wooden utensil. Since all the juice gets squeezed through the pulp, I think the oils from the fruit are released with the juices as you squeeze, so that the air is filled with the smell of oranges and lemons and is just the best way to cheer up a dull rainy day.

It’s like sunshine in a drink.

I hold a sieve over the jug so that it catches the pulp bits to keep the juice clear.

The recipe couldn’t be any simpler – Oranges and Lemons in equal amounts, squeezed into a jug – about 3 large oranges and 3 un-waxed lemons.

Once you have squeezed the juice into the jug, add ice and water.

If the oranges are very sweet, then there’s really no need to add sugar. But if you are using the bitter variety or just want some sweetness, I think it goes really well with Honey.

For a Mediterranean feel, a splash of Orange Blossom Water will lift this drink. It’s difficult to describe, but if you like the scent of orange blossoms combined with citrus notes, then this is the perfect combination . It’s delicious with just a hint splashed in at the end with some fresh mint.

Of course, this is one of the many ways that Orange Blossom water can be used at home. It is a hydrolat, collected from the making of essential oil.

Bitter-orange blossoms are collected, washed and then crushed to release their scent into distilled water, gently steamed, so that the essential oil can be collected, what’s left is the scented water which is the hydrolat that can be used both in food and in  skin care and can also be used as a room scent, or even as a linen water.

In Morocco, Orange Blossom Water in a bowl of water is presented to guests so that they can refresh their hands when they enter the host’s home. I think this is such a lovely tradition, which has given me an idea for making an Orange Blossom Water hand wash and lotion.

But first, back to that St Clements….

For a lovely summer drink, I can think of nothing else than iced tea that instantly hits the spot in terms of quenching thirst.

It has to be icy cold of course.

To make it up fresh is much better than the type you can get pre-made. At any rate I think they are too sweet to taste. I prefer the sharpness of fresh lemon and lime to cut through the taste of the tannin in the dark tea.

The version shown is simple to make.

In a jug, pour hot water, about 90c (not boiling), into this add two tea bags. this can be green tea or any blend you prefer. For a more traditional taste, I’ve used an English Breakfast blend which is great as it is refreshing without being too strong or smoky dark.

Add slices of lemon and lime and let them steep in the hot water with the tea bags. I like to leave the lemon and lime peel on the slices so that the scent of the peel infuses with the juice and tea. You can of course experiment with any citrus fruits, oranges or grapefruit works well too.

When the jug has cooled, remove the tea bags, you can remove the lemon and lime slices too, but I think they look lovely in the jug and when they slip into the glass tumblers.

English mint is at their best in summer, you can of course get mint ready cut and trimmed from most supermarkets at any time of the year, but I think they are best when in season, cut fresh from the garden.

I’ve bruised the leaves to release their lovely scent. You can add this to the drink, just before serving, I think the scent of the mint really lifts the drink.

As we had a bottle of vanilla syrup in the cupboard, I added just a splash of this to the cups along with some slices of fruit. You can add sugar or honey to sweeten the drink as well.

I think Vanilla and Strawberries work great together, so in they went into the cups along with lots of ice cubes to make the drink icy cold.

To vary this, you can add different pieces of fruit when serving.

Jasmine and tea drinking

 

As far back as I can remember we drank Jasmine tea at our parents house. Even after setting up our own home, tea infused with Jasmine is my go to drink, especially late at night.

The lovely delicate scent of Jasmine seems so relaxing and familiar. I’ve tried lots of other teas, but always return to Jasmine.

I have often wondered why the beautiful little flowers are left in the loose tea.

Apparently, good quality tea that is infused with Jasmine flowers, goes through a time honored tradition of harvesting the Jasmine flowers late in the evening, just before the flowers open, so that when the flowers to open up and the scent is able to perfume the air, it is captured in layers of tea.

In China, Jasmine is used widely to scent a variety of teas, green, white as well as dark leaf tea. Traditions for tea drinking amongst the Chinese vary, but it is an important part of any social gathering or occasion.

The plant originated in Persia and was brought to China around 300AD and has been used in tea, but also used as perfume, in incense and traditional Chinese herbal remedies for improving liver function and for stress and anxiety.

I think that’s why it’s a favourite of mine. Occasionally, it is great to make a full pot of Jasmine tea, using the loose leaf type and let the steaming tea sit for while before drinking and although it takes a bit more effort to make and to clean up afterwards, it is worth taking the time out to enjoy the simple ritual of drinking tea. Most of the time, however, for convenience, though, I drink the green tea variety that comes in a bag.

The loose leaf variety can be found in most supermarkets, sometimes though I like to indulge and seek out a special blend which make the occasion of drinking the tea all the more special. I keep the tea in a small caddy from Whittards of Chelsea that was given to me as a gift one Christmas.
